Fruit rice with cashew sauce

This is a crunchy fruit and vegetable dish with creamy vanilla cashew sauce. This is the favorite of my family. You must try it,
You can use almond instead of cashew because normal cashew isnt raw. (In Hungary only not raw cashew is available)


Ingredients:
2 cups of zucchini cut into little pieces
1 cup of fresh fruits cut into little pieces (apple, banana, orange…)
1 cup of sundried fruits cut into little pieces

for the sauce:
1 cup of cashew
1/2 cup of water (maybe a little more…)
1 spoon agave syrup or stevia as you like it
juice of a half of lemon
1 pinch of vanilla powder


For the sauce put the ingredients into the blender and blend it until smooth. Put the zucchini and the fruits in a bawl, pour the sauce on it and stir it well. It will be better if you put it apart for an hour or two.

Apricot cream soup

I've been meaning to prepare this soup for ages. My problem is that whenever I bought apricots, I brought them home, and just as when I was about to start making the dish, they were gone. Now, at the end of their season, I finally managed to save the last couple of them.




Ingredients for one person:
6 nice and ripe apricots
1,5 glass of water
pinch of vanilla powder
pinch of cinnamon
1 tsp lemon juice (depending on the sweetness of the apricots, can use a bit more)
honey (also depends on the sweetness of the fruit)
1 tbspoon hemp seed or 1 tbspoon casheew

some menta leaves or sliced fruits for decorating

Wash the apricots and get rid of their core. Put everything into the blender. If it's too thick, add some water.

It really tastes like jam. Maybe, with less water, it would make a nice pudding.

Chocolate cream with fruits

This chocolate cream is tasty and creamy and is suitable with many kinds of fruits.


Ingredients:
3 bananas
1 avocado
1 tbsp raw cacao powder
1 tbsp raw carob powder
1-2 tbsp water or almond milk

Put every ingredient into a high speed blender, and blend until smooth. Put more water or almond milk if it is necessary to a creamy consistency.

Put into pretty glasses with fruits! With Orange like this:


And with strawberry like this:



Garnish with goji berry or mint leaves.
